Super Bowl Snack: Nut Dip

The Super Bowl is this coming Sunday. Whether you watch it for the game, or the commercials, or for the half-time show, snacking is a big part of the event. Wings, chips and creamy dips are the common go-to game time snacks, but this healthy vegan nut dip will have everyone going nuts over it!
Nuts are rich in heart-healthy fats and a variety of vitamins, minerals and antioxidants. Research shows that eating nuts daily may promote good health. Studies have shown that nuts may reduce the risk for developing chronic diseases such as heart disease and diabetes, likely by helping to improve cholesterol and blood sugar numbers.
Made with raw ingredients, this dip is easy to prepare and is a perfect snack to eat anytime. Serve it with raw veggies, or as a spread on crackers and breads.
Nut Dip
• 1/2 cup raw almonds • 1/2 cup raw pistachios • 1/4 cup raw walnuts • 1/4 cup raw pine nuts • 1/2 cup red or orange bell pepper, chopped • 3 Tbsp plus 1 or 2 tsp freshly squeezed lemon juice • 1 clove garlic, sliced • 1/2 tsp sea salt • Freshly ground black pepper to taste • 4 to 6 Tbsp water • 1/2 cup fresh basil leaves • 1 1/2 tsp fresh thyme leaves In a food processor or blender, combine nuts, bell pepper, 3 Tbsp lemon juice to start, garlic, salt, pepper and 4 Tbsp water. Purée until fairly smooth. Be sure to scrape down the sides so that everything is blended. Add basil and thyme, and purée again until well combined. Add remaining water and lemon juice a little it at a time until you have your desired thickness. Photo from here, with thanks.Categories
