Healthy Snacking: Protein-Rich Raspberry Brownies

It’s so important to make sure our kids are getting all the nutrients their bodies need during their busy days at school, especially to keep their learning game on. Proper nutrition is linked to cognitive development, including memory, attention, problem-solving, and learning abilities. Nutrients like omega-3 fatty acids, iron, zinc, and various vitamins play a role in brain development and function.
Instead of all the refined sugars and processed ingredients in a lot of our foods, try making these homemade protein-rich raspberry brownies as a perfect nutrient-packed alternative that your kids will love.
To get your kids more involved with the foods they are eating, encourage them to get in the kitchen to help make this recipe with you! This will help with their understanding of knowing the importance of properly nourishing their bodies.

Protein-Rich Raspberry Brownies
- Coconut oil, for greasing the pan
- One 14oz can chickpeas, rinsed & drained
- 4 medium eggs, at room temperature
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- One 12oz package chocolate chips (dark, semi-sweet, or your favorite)
- 1/4 cup maple syrup (adjust to taste)
- 1/3 cup coconut oil
- 1 cup raspberries
Preheat oven to 350 degrees F. Oil an 8x8 inch square baking pan.
Place chickpeas in a food processor and pulse until pureed.
In a large mixing bowl, with an electric mixer, beat 4 eggs. Mix in salt, baking powder, and chickpeas, then set aside.
Melt chocolate chips in a double boiler over medium-low heat. Remove from heat and let cool to room temperature.
Whisk chocolate into egg mixture until well blended.
Slowly add maple syrup – taste for sweetness; add oil and mix well. Fold in raspberries.
Place batter in the prepared pan and bake for 35-40 minutes or until a toothpick inserted comes out clean.
