Dinner Tonight: Five Delicious Pancake Recipes
Today is Pancake Tuesday, or Shrove Tuesday or Mardi Gras. Whatever you call it, it is a day where many people celebrate by eating pancakes. Whether you observe Pancake Tuesday or not, pancakes are an easy and delicious breakfast, lunch or dinner option when you need something in a pinch. Another reason to sit down to a plate of pancakes is that you can make them incredibly nutritious.
Over the years we have shared many pancake recipes. Some have been more traditional than others, but all have two things in common: they are delicious, and they are nutritious. So if you are looking for something a little different than your traditional pancake recipe, look no further.
Sweet Potato Cakes
These savory and flourless pancakes are high in vitamin C, beta carotene and fiber, and perfect for when you feel like something hearty and nourishing.
Blueberry and Almond Pancakes
High in antioxidants and protein, these are a perfect way to use frozen blueberries.
Zucchini Pancakes
Zucchini is one of my favorites things to add to pancakes. It is a light-tasting vegetable and has a range of nutrients including vitamins B6 and C, potassium and manganese.
Pumpkin Pancakes
This one uses canned pureed pumpkin and a prepared mix, but still contains a ton of nutrition and flavor. Pumpkin is loaded with antioxidants that contribute to good vision, healthy skin, a strong immune system, and bone and teeth development. It’s also a good source of vitamins A, C, K and E, as well as the minerals magnesium, potassium and iron.
Beet Pancakes
My kids call these pink pancakes! It is a great way to sneak in a root vegetable they would not normally eat. Beets are rich in folate, as well as betacyanin (giving beets their purple/red color). Betacyanin has been found to possess a cancer-fighting ability.
