Breakfast Today: Brain Food Smoothie

Last week, in the first part of my series about brain health, I looked at food and good nutrition and its role in cognitive function. So, I started thinking of ways I could combine some of these foods into a quick and easy meal. I spent the weekend coming up with yummy smoothie recipes using some of the foods mentioned and although all were delicious, my family and I had a clear favorite.
Blueberries, spinach and walnuts have all been shown to benefit brain health, each in their own unique way, and these are the key ingredients in this mind sharpening smoothie that everyone will love. I usually add bananas to smoothies for sweetness and creaminess, but I had some very ripe pears and added those instead and was pleasantly surprised! Pears are in season and offer similar nutritional benefits to apples. They are an excellent source of fiber, plus a good source of vitamin C. Adding the pear to this brain food smoothie was pear-fection. (Sorry, couldn't help myself!)
Brain Food Smoothie
• 1 cup fresh spinach, lightly packed
• 3/4 cup almond milk
• 1 ripe pear, peeled and cored
• 1/4 cup walnuts
• 1 1/2 cups frozen blueberries
Place ingredients in a blender. Start off at a lower speed and then increase until you have desired consistency. Pour in a cup and enjoy!
