Watermelon Salsa

Watermelon Salsa Recipe
Ingredients:
- 3 cups watermelon, diced
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1-2 jalapeño peppers, seeded and finely chopped (optional, for a spicy kick)
- Juice of 2 limes
- Salt and pepper to taste
Instructions:
- Prepare the Ingredients: Dice the watermelon, cucumber, red bell pepper, and red onion. Finely chop the fresh cilantro and jalapeño peppers.
- Combine in a Bowl: In a large mixing bowl, combine the watermelon, cucumber, red bell pepper, red onion, cilantro, and jalapeños.
- Add Lime Juice: Squeeze the juice of two limes over the mixture.
- Season: Add salt and pepper to taste.
- Mix Gently: Gently toss all ingredients until well combined.
- Chill and Serve: Refrigerate the salsa for at least 30 minutes to let the flavors meld. Serve chilled with whole-grain tortilla chips or as a topping for grilled fish or chicken.
