Snack Today: Coconut Oat Squares
If you are looking for a tasty and healthy treat, this is it! These coconut oat squares are delicious, perfect for snacks and to throw into lunches, plus they are filled with heart healthy goodness. And kids love them!
Oats are fiber-filled whole grains and may help lower LDL (bad) cholesterol and protect against coronary heart disease, as well as some cancers. As if that’s not enough, this power-packed grain also eases constipation and helps control blood sugar levels. Hemp hearts and flaxseed are also heart-friendly foods that provide good fats, fiber and plenty of flavor.
Coconut Oat Squares
• 1 cup large-flake oats
• 1 cup oat flour
• 1/2 tsp baking soda
• 1/4 tsp sea salt
• 1/2 cup coconut oil, at room temperature
• 3/4 cup coconut sugar
• 1 Tbsp ground flaxseed
• 3 Tbsp water
• 1 cup unsweetened medium-shredded coconut
• 1/2 cup hulled hemp hearts
• 1 oz dark chocolate chips, melted (or not melted, mixed in before baking)
Preheat oven to 350 F. Line a 9 x 13 inch baking dish with parchment paper.
In a medium bowl, combine oats, oat flour, soda and salt. Mix until it is all blended and set aside. In a separate medium bowl, combine coconut oil and coconut sugar. Stir with a wooden spoon until creamy.
In a small bowl, combine flaxseed and water. Stir to blend. Set aside for a couple of minutes to thicken. Then add flaxseed/water mixture to coconut oil and coconut sugar mixture and stir in. Stir in oat mixture until completely blended. Stir in shredded coconut and hemp hearts until blended.
Press mixture into the parchment paper-lined baking dish. Pat into an even thickness. Bake for 12 to 15 minutes or until golden. Remove and immediately cut into squares with a pizza cutter or knife and leave in the pan to cool.
Melt chocolate slowly in a double broiler (or a small bowl over hot water) and drizzle over the bars. Refrigerate until ready to eat!
