Lunch Today: Kid-Friendly Pita Pizzas

I have never a met a kid who didn't like pizza. And full disclosure, while other kids in college were chowing down on ramen noodles and Kraft dinners, pita pizzas were my staple! The great thing about these is that they are easy to make, and you can put any topping that you wish on them. They are also the perfect meal to get kids to roll up their sleeves and help with meals.
I have found that the more a kid participates in helping prepare a meal, the more likely they are to eat it as well as try new things. So the recipe below is a favorite here, but if your kids don't like pesto, try olive oil and garlic or your favorite sugar-free marinara sauce as the base. If you aren't vegan, use any cheese your kid likes. We also use mini pitas, so you can try many different types of pizza at one sitting. Put out a variety of chopped up vegetables and encourage your children to try something new, even if it's just one sliced olive!
Kid-Friendly Pita Pizzas
• 1 bag of mini whole-grain pitas
• Cilantro pesto (recipe here)
• 1 cup of diced cherry tomatoes
• 1 cup chopped broccoli florets
• 1/2 cup vegan mozzarella
• Sprinkle of nutritional yeast
Spoon pesto on pitas. Add veggies and cheese. Sprinkle with nutritional yeast. Bake for 10 min at 375 degrees and eat!
