Five Delicious Recipes for Leftover Turkey
These recipe ideas do not have measurements. You can use as much or as little of things you want to you taste.
Turkey and Cranberry Panini
- Leftover turkey slices
- Cranberry sauce
- Sliced brie cheese
- Sourdough bread
- Butter
Spread cranberry sauce on one side of each slice of sourdough bread.
Layer turkey slices and brie cheese between the bread slices.
Butter the outer sides of the bread.
Grill in a panini press or skillet until the bread is golden brown and the cheese is melted.
Turkey and Vegetable Stir-Fry
- Leftover turkey, shredded or chopped
- Mixed vegetables (bell peppers, broccoli, carrots, snow peas)
- Tamari
- Sesame oil
- Ginger and garlic, minced
- Cooked rice or noodles
In a wok or large skillet, stir-fry vegetables in sesame oil until tender-crisp.
Add shredded turkey, soy sauce, ginger, and garlic. Stir-fry until heated through.
Serve over cooked rice or noodles for a quick and flavorful stir-fry.
Turkey and Wild Rice Soup
- Leftover turkey, shredded
- Cooked wild rice
- Onion, celery, and carrots, chopped
- Chicken broth
- Thyme and sage
- Heavy cream (optional)
In a pot, sauté onions, celery, and carrots until softened.
Add shredded turkey, cooked wild rice, chicken broth, thyme, and sage.
Simmer until flavors meld and vegetables are tender.
Stir in heavy cream if desired, and season to taste.
Turkey and Avocado Wrap
- Leftover turkey slices
- Tortillas
- Avocado, sliced
- Lettuce and tomato, chopped
- Mayonnaise
Lay out a tortilla and spread a layer of mayonnaise.
Add turkey slices, avocado, lettuce, and tomato.
Roll the tortilla tightly, cut in half, and secure with toothpicks for a satisfying turkey wrap.
Turkey and Cranberry Quesadillas
- Leftover turkey, shredded
- Cranberry sauce
- Shredded cheddar or Monterey Jack cheese
- Flour tortillas
Spread cranberry sauce on one side of a tortilla.
Layer shredded turkey and cheese on top and cover with another tortilla.
Cook in a skillet until the cheese is melted and the tortillas are golden brown. Slice and serve.
