Drink Today: Blueberry Mint Limeade

On hot humid days, a refreshing drink is what I want most. Skip the old lemonade recipe and try this blueberry mint limeade that is sure to quench your thirst!
Among fruits, blueberries have one of the highest antioxidant capacities. Like cranberries, blueberries promote urinary tract health. They have also been shown to support memory, balance, and coordination. Blueberries also support eye health by increasing circulation of the capillaries of the eyes, which reduces oxidation in these tissues. They also strengthen other capillaries, as well as arteries and veins. And, blueberries have anti-inflammatory properties.
Blueberry Mint Limeade
• 2 1/2 cups blueberries
• 1 1/2 cups water
• 1/2 cup organic raw cane sugar (or less depending on your desired sweetness)
• 4 mint sprigs
• 1 cup freshly squeezed lime juice
• 2 to 3 cups soda water
Place 2 cups of berries in a saucepan. Add water and sugar. Bring to a boil over high heat, then reduce to medium. Partially cover and simmer, stirring occasionally, until berries soften and pop, 3 to 4 minutes. Stir in 3 mint sprigs, then remove the pan from the heat. Let it cool, then discard the mint. Purée with a hand blender. For a smoother texture, you can strain the liquid. Return the liquid to saucepan and stir in lime juice and soda water.
Pour into a large pitcher and stir in the remaining 1/2 cup blueberries and mint leaves from last sprig. Chill until ready to serve. You can serve over ice for an extra refreshing drink.
