Dinner Tonight: Sheet Pan Chicken with Vegetables

A fellow hockey mom introduced me to sheet pan meals. It sounded too good to be true. A healthy meal with things in your pantry in 30 minutes?! Well, not only is it true, my first attempt at it was delicious and sheet pan dinners have quickly become a much requested meal from everyone!
Roasting, broiling, and baking are nutritious ways to cook too, enhancing foods’ flavors while locking in nutrients that cooking methods such as boiling leach out. And for a busy, busy family, being able to have a healthy homemade meal In 30 minutes or less, with minimal cleanup makes this recipe a winner.
Although I have measurements and ingredients, you can use whatever you have in your fridge for protein and veggies – add carrots, asparagus, broccoli... anything goes! If you don't have fresh herbs, use dried herbs. The key is too keep it simple.
Sheet Pan Chicken with Vegetables
Chicken
• 1 pound of chicken (breast or thighs), skinless and boneless, cut into halves
• 1 tbsp balsamic vinegar
• 1/2 tbsp extra-virgin olive oil
• 2 cloves crushed garlic
• 2 tsps chopped basil
• 1 tsp chopped parsley
• 1 tsp dried oregano
• 3/4 teaspoon salt
Balsamic Vegetables
• 1 large red bell pepper, cored and cut into 1-inch pieces
• 1 medium zucchini, quartered lengthwise and cut into 1-inch cubes
• 8 to 10 small potatoes, cut in quarters
• 1 medium red onion, cut into 1-inch pieces, layers separated
• 1 cup cauliflower florets
• 2 tbsp balsamic vinegar
• 1 1/2 tbsp extra-virgin olive oil
• 1 tsp salt
• 1 tsp ground black pepper
• 2 tsps chopped basil
• 1 tsp chopped parsley
• 1 tsp dried oregano
Preheat the oven to 450 degrees F. Line a large sheet pan with parchment.
Season chicken with all the ingredients under chicken. Marinate while you prep the vegetables.
In a large bowl toss the vegetables with all the ingredients under Balsamiic Vegetables.
Spread the veggies out onto the sheet pan and place the chicken in with the vegetables. Roast until tender in the lower rack of the oven, about 20 to 25 minutes, until the chicken is cooked through.
