Easy and delicious, this recipe is perfect as a side dish for summer meals or enjoyed on its own as a snack.
Sweet and Spicy Pickled Cucumbers
Ingredients:
- 2 large cucumbers, thinly sliced
- 1/2 cup rice vinegar
- 1/4 cup soy sauce
- 2 tablespoons honey or maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon chili crisp (or 1 teaspoon red pepper flakes for heat)
- 2 garlic cloves, minced
- 1 tablespoon sesame seeds
- 1 green onion, thinly sliced
- 1/4 teaspoon salt
Instructions:

Prepare the Cucumbers: Wash the cucumbers thoroughly and slice them into thin rounds. Place the slices in a colander, sprinkle with salt, and let them sit for about 10-15 minutes to draw out excess water. Rinse and pat dry with paper towels.

Make the Sauce: In a large mixing bowl, whisk together the rice vinegar, soy sauce, honey or maple syrup, sesame oil, chili crisp or red pepper flakes, and minced garlic until well combined.

Combine and Marinate: Add the cucumber slices to the sauce, making sure each slice is well coated. Stir in the sesame seeds and green onions for an extra burst of flavor and texture.

Transfer to a Jar: Pack the cucumber mixture into a clean jar, pressing down to eliminate any air pockets. Pour any remaining sauce over the cucumbers.
