Breakfast Reimagined
Margo Gladding on
While we often think of eating vegetables at lunch or dinner, we tend to overlook them for breakfast. Yet, having vegetables for breakfast can provide a nutrient-rich start to your day. Vegetables are low in calories, high in fiber, and contain a wide variety of important vitamins, minerals, and antioxidants that your body needs to thrive.
The health benefits of eating vegetables are numerous. For example, the nutrients in vegetables support healthy gut function, weight management, healthy skin, detoxification, improve mood and energy levels, reduce the risk of chronic disease, enhance immune system functioning, and reduce inflammation. And a diet rich in vegetables has been associated with a lower risk of chronic diseases such as heart disease, certain cancers, and type 2 diabetes.
Vegetable powerhouses include dark leafy greens, asparagus, cabbage, zucchini, peppers, and onions. In addition, cruciferous vegetables such as broccoli, cauliflower, kale, Brussels sprouts, and arugula are some of the most nutritious options. These vegetables contain phytonutrients that have been shown to help reduce your risk of cancer. Other top choices for vegetables include sprouts, which are packed with vitamins, minerals, essential fatty acids, enzymes, and antioxidants. And, fermented or cultured vegetables, such as kimchi or sauerkraut provide beneficial microbes that support gastrointestinal health and immune system health.
The recommended daily intake of vegetables is 2 to 3 cups a day, but most Americans fall short. If you are looking for easy ways to incorporate more vegetables into your diet, smoothies or green drinks can be a convenient option. We have a wide variety of high-quality greens powders at Village Green that can be conveniently added to any beverage to help boost your intake of vegetables, grasses, fruits, and other healthy superfoods. Some great options include Thorne Daily Greens Plus, Ora Easy Being Green, and Garden of Life Raw Organic Perfect Food Energizer. If you have a bit more time on your hands in the morning to prepare a warm meal, try adding sautéed mushrooms, spinach, zucchini, and tomatoes to your scrambled eggs or incorporating peppers, asparagus, onions, and kale into a sweet potato hash. I also recommend making this delicious recipe for egg toast with kale and avocado.
Reimagining the traditional sugar-laden breakfast options of pancakes, bagels, or cereal and fueling your body with nutrient-dense vegetables, healthy fats, and lean protein has many health benefits. Not only will it help set a healthy tone for your day, but it can also help to stabilize blood sugar levels, reduce carb cravings, promote gentle detoxification, keep your bowels running regularly, enhance your mood and mental performance, and nourish your body with nutrients for sustained energy.
