Composed of 20 different amino acids, proteins are complex structures that can be difficult to digest. Amino acids are combined to make different proteins, just like letters are combined to make different words. And just like certain Words are harder to pronounce, certain proteins are harder to digest. Some proteins are easily broken down into smaller peptides and free amino acids, but others resist complete digestion. When consumed, the incomplete digestion of these proteins may cause gastrointestinal distress including bloating, gas, diarrhea and/ or constipation.
Although gluten is a rich source of the amino acid proline, it is difficult digest. Unfortunately, many of us are deficient in the enzymes necessary to digest the proline bonds. Serotonin levels in the body are associated with the regulation of sleep, mood, aggression, appetite, temperature, sexual behavior, and pain sensation.*
