Lunch Today: Sweet Potato Cakes

- 1 large yam, peeled and diced (about 2 1/2 cups)
- 2 Tbsp olive oil, divided
- 1/2 sweet onion, diced
- 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1 large garlic clove, smashed and minced
- 1/4 cup bread crumbs (gluten free if you prefer)
- 2 Tbsp ground golden flaxseed
- 1 Tbsp nutritional yeast
- 2 Tbsp minced Italian parsley
- 2 Tbsp minced fresh cilantro
