My favorite Mother’s Day meal was the very first one my son ever made for me. He was 4. It was simple. A bowl of cereal and juice. He was so proud of himself and it made my heart full. It has evolved a little more since then, and my daughter has joined in. And every year, I look forward to their homemade cards and the breakfasts they make. I know, I am not the only mom who feels this way. So, If you really want to do something memorable and show how much you care, surprise your mom with a healthy, home-cooked breakfast or brunch.

## Oatmeal Kebabs with Raspberry Sauce

Kiwis, raspberries and oranges provide a good dose of immune-boosting vitamin C, but you can use any fruit she likes. Even dried fruit works well. What makes this breakfast even better is the delicious sauce to dip in.

### Raspberry Coconut Sauce

-   1 Tbsp orange juice
-   1 cup fresh or frozen raspberries, thawed
-   1/4 cup coconut milk
-   1 Tbsp maple syrup

To make the sauce, combine all ingredients in a blender. For a smooth sauce, strain through a fine-mesh sieve. Refrigerate until ready to serve.

### Oatmeal Kebabs

-   2 kiwis, peeled and cut into 1/2 inch thick half moons
-   1 cup raspberries
-   1/2 large orange, cut into 1 in segments

Assemble kebabs by alternating threading 2 oatmeal balls and several pieces of kiwi, raspberries and oranges onto eight 8-inch wooden skewers. Serve with Raspberry Coconut Sauce for dipping.

## Maple Granola Raspberry Parfaits

This is another easy breakfast to put together, especially if you have granola on hand. With creamy yogurt and sweet-tart berries, this parfait will leave Mom feeling like she’s spooning up a special dessert for brunch. Sprinkle some shaved dark chocolate to make it even more decadent.

-   3 1/2 cups plain Greek yogurt
-   2 1/2 cups raspberries
-   Dark chocolate shavings

To a wide-mouth glass or jar, add a layer of yogurt, granola and raspberries. Repeat with more layers, if desired, and sprinkle with dark chocolate shavings.

## Red Velvet Smoothie

Dessert for breakfast? This mom says yes! This decadent breakfast may sound more like a dessert than a healthy meal, but it is chock-full of nutrition.

-   1/4 cup mom’s favorite milk
-   1/2 cup cottage cheese or vegan cottage cheese alternative
-   1 small red beetroot, peeled and chopped
-   3 mint leaves (optional)
-   2 Tbsp ground flaxseed
-   1 tsp orange zest
-   1/4 tsp cinnamon
-   1/2 cup frozen strawberries
-   1/2 frozen banana, chopped
-   1 Tbsp coconut chips
-   2 Tbsp chopped walnuts
-   1 Tbsp dark chocolate chips
-   1 tsp maple syrup

Add milk, cottage cheese, beet, mint, flaxseed, orange zest, cinnamon, strawberries and banana to a blender and blend until smooth and thick. Pour into a pretty cup or bowl and top with coconut chips, walnuts and chocolate chips. Drizzle maple syrup on top.
